Healthy, Happy, and Hip Winter Kale Salad

Ingredients:
Salad:
- Big bowl of raw kale
- 1 Sweet potato
- 1/2 Cup walnuts
- 1/4 Cup dried cherries
- 1/4 Cup raw unsweetened coconut flakes
Dressing:
- Salt
- Pepper
- Balsamic vinegar to taste
Directions:
- Start by massaging the kale while shredding until the color brightens.
- Roast sweet potato and toast walnuts.
- Mix in ingredients.
- Mix in dressing.
