Curried Quinoa Stir-fry

1 cup quinoa
2 T olive oil
1 onion, chopped
½ red pepper, chopped
½ cup peas or edamame  (shelled), thawed
¼ c chopped cashews or almonds
¼ cup diced dried apricot, figs, dates, raisins or diced fresh apple or pear
1 teaspoon curry powder
sea salt and pepper
1 T chopped parsley or cilantro

Read directions on package to see if rinsing quinoa is necessary.
Bring 2 cups of water to a boil over high heat and add the quinoa.
Lower the heat , cover the pan, and simmer 15-20 minutes until all the water has been absorbed. Set aside.

Heat the olive oil in a skillet or wok. Saute the onion and pepper for 2-3 minutes until softened. Add the peas or edamame, apricots or other diced fruit, curry and s and p and cook for 1 minute more.  Add the cooked quinoa and toss together.

Sprinkle with parsley or cilantro and serve hot.
