Healthy, Happy, and Hip Summer Kale Salad
Prep time: 15 minutes
Yields: 10 people
Ingredients:
- Big bowl of shredded kale
- Pineapple chunks as you like
- 1 Small cucumber
- 1/2 Cup chopped pecans
- 1 Red onion
- 1 Lemon
- 1 Tbl. Olive oil
- Salt
- Pepper
Optional Ingredients:
- 1 Tomato
- 1/2 cup Goat Cheese
- can of Beans
- Fresh Herbs
- 1 Avocado
Directions:
- Start by massaging the kale while shredding until the color brightens.
- Mix in ingredients.
- Squeeze in juice from the lemon.
- Mix in whatever optional ingredients you desire from the list above.
